Composting
Winter composting is very doable.
All it takes is some thought and time. Compost consists of green and brown debris. The green debris you could add would be vegetable scraps, and the brown debris would be dried leaves. Here are a few things to consider using that you might have on hand: coffee grounds, egg shells, news paper (not the colored slick pages), and vegetable peelings. Add them all and keep your compost growing through the winter!
